This is something that I just kind of … Thought of.. And when I asked dear Boyfriend if it would make sense, he Immediately started drooling, saying that his mom makes something quite the same. So I wrote down a little trial recipe to see if it would work out, and sometime soon we’ll try it out for dinner! Tomorrow perhaps.

Once in a while I like to go down to my local grocer and pick out some of the freshest ingredients for my home made pho soup. This is a Vietnemese-like soup, taken from my Williams-Sonoma cookbook, and adapted with my own interpretation and locally fresh groceries. This soup does take  a while to cook, but makes enough for 4 servings in each pot, and is great for leftovers.

For a summer-fresh dinner all seasons of the year try these simple, economic recipes. The pesto is inexpensive and keeps in the fridge for days and the bruscetta is the epitome of summertime, any time of the year. There are also two alternative recipes using the pesto and bruscetta mixes. They’re relatively simple to make, and are delicious if a hungry friend stops by!

Don’t get me wrong, KD is one of the best boxed food wonders of our time. There are always two boxes in my cupboard at all time. However, there are times where although I would like florescent ’cheese’ dinner, I still want to believe that I may not die at 30 from obesity or high cholesterol. So I came up with a 5 item dinner thats inexpensive, and makes a a lot of dinners for that one time cost.

One of my favorite little recipes are these Broccoli, Sausage and Cheese pockets. These are a hit at my house because the bottom of the dough begins to fry into a crispy, delicious mess and the filling is simply incredible. If you have the time, I HIGHLY suggest putting on your cooking hats and trying this recipe for yourself.
