For all those taco lovers out there, heres a special meal for you. Quesadillas are easy, healthy and budget friendly. Ive also taken the liberty of creating a side for this meal: Spicy tomato rice. This is a good meal on any weeknight, as well as a travel-friendly lunch.
Chicken Quesadillas with Spicy Tomato Rice
Quesadillas
1 chicken breast
2 soft tortillas
1 green onion
1/4 cup salsa
1/2 cup grated cheese
1/4 sour cream
Spicy tomato rice
1can diced tomatos
1/4 cup rice
1 tsp chili powder
1tsp cumin
1tsp pepper
1tsp salt
Quesadillas
Put a small amount of oil in a frying pan and cook the chicken breast 6 minutes on each side or until cooked through
in a clean frying pan, put a small amount of oil, and one soft tortilla in the pan to brown. Cut or tear up chicken. Add cheese to browning totilla, then chicken, green onion and second tortilla. Flip and brown on second side.
Serve with salsa and sour cream
Rice
In a small pot, boil rice with 1/2 can diced tomatoes and tomato juice, and top up with water. Add cumin chili powder and salt and pepper to the pot and continue boiling until rice is cooked through.
