Buzzy Bee Cookies

On dreary days like today, I like to stay indoors and cook. Sometimes, on days that the sweets craving just wont subside, I look for this recipe to keep me busy. And the result is a sweet reward for all your efforts! The buzzy bee cookie is layered chocolate and vanilla and truly lives up to its name!

This is the halved recipe, because 5 dozen cookies is far too much! You should end up with 2.5 dozen with this.

Buzzy bee Cookies

1/4 cup soft Butter

1/4 cup Sugar

1/2 Egg (I know its not common to half an egg, but when you half a recipe, a whole egg is just too much. simply take 1/2 the white and 1/2 the yolk)

1/2 tsp Vanilla extract

3/4 cup All Purpose Flour

1/4 tsp Baking Powder

Pinch Salt

3/4 cup Semi Sweet Chocolate Chips

In a bowl, cream [mix together until reaches soft fluffy consistency] together butter and sugar. When creamed, add egg and vanilla and mix together. Slowly add dry ingredients to the wet mixture and mix well. In a microwave (or double-boiler: put chocolate in a heat safe metal or glass bowl and place over a small pot that has a small amount of boiling water in it. Make sure the water does not touch the Bottom of the bowl, and continue simmering the water until the chocolate is melted. But, in a normal student kitchen, the microwave works just as well.)

Divide your dough in half, one half is to be left vanilla-white, and in the other half, stir in the melted chocolate and mix until the dough is completely chocolate. Roll each out in between two pieces of parchment to about 1/4inch thickness. At this point, you should have 2 rolled out sheets of dough. REFRIGERATE FOR 1 HOUR

When cooled, take the doughs out and divide each into 1 inch wide strips. Stack the strips neatly on top of each other and refrigerate again for 15 minutes.

Take out of the fridge and cut into 1/4 inch sliced and Bake in a 350 degree F oven for about 10-15 minutes,or until golden brown.

**Keep an eye on these cookies, they tend to cook quickly!
