6th and 7th Days of Christmas Cookies!

Here are two recipes for your Christmas collection! Go Check out the site AllRecipes, and peruse their archives. I have found one of the most delicious recipes for peanut butter cup cookies, DIVINE! The 7th day Recipe is a chicken pita appetizer, easy to throw together in a pinch and interchangeable with your favorite pita toppings!

6th Day of Christmas Peanut Butter Cup Cookies

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup peanut butter
  • 1/2 cup packed brown sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 40 miniature chocolate covered peanut butter cups, unwrapped
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Sift together the flour, salt and baking soda; set aside.
  3. Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well.
  4. Shape into 40 balls and place each into an ungreased mini muffin pan.
  5. Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

7th Day of Christmas Greek-Style Chicken Pita Appitizers

15 mini pitas, halved and middles split open

3 Avacados

3 chicken breasts cooked and cut into thin strips

1 clove Garlic

Salt

Pepper

1/5 cup white or red wine,

2TBSP Brown sugar

1TSP oregano

1 TSP thyme

Pre-made Tzatziki sauce (Recipe for homemade: 1 SM container plain yogurt, 1 cucumber -grate and wring out water, 2cloves Garlic chopped. Mix all ingriedients together, S&P to taste.)

Add Ins: Finely chopped red onion, sliced cherry tomatos, black olives, green olives, lettuce, alfalfa, arugala, bean/ radish/ onion sprouts etc.

In a pan, begin cooking chicken. At the halfway point, add in the chopped garlic clove, brown sugar, Thyme, Oregano and Wine. Cook until the chicken is not pink in the middle anymore, then thinly slice the breasts *small enough to fit 2-3 peices in each 1/2 pita. Cut open the avacado, and thinly slice the inside. the avacado may need to be slightly green still in order to cut proper slices. Spread Tzatziki sauce on one side of the half pita, add 1 small slice of avacado, 2-3 slices of chicken and your add ins. These can be pre-made up to 10 hours in advance, otherwise the pita may go soggy because of the tzatziki sauce. Stick toothpicks through the open ends to keep all of the ingriedients inside, and to make serving easier!
