Chocolate Truffles, rolled in cocoa powder and chopped walnuts. This is a recipe for the chocolate lovers out there, as these little morsels are something to behold. Everyone thinks that truffles are hard to make, but really with a few simple ingredients, and a few hours patience they always come out amazing. And who doesnt love handmade v-day treats?!

This recipe called for chili powder in the truffles, and please make sure you try this at least once. It can be omitted along with the orange peel, and you will still have delicious chocolatey morsels, but the recipe really does shine with them in! The Mayans used chilipowder for a few (rather un-sexy) purposes of curing stomach ailments, and for relief of blocked bowels, however my addition adds a spicy delicious flare, minus the bowel movements…

Liss’s Mayan Chocolate Truffles

2.5 cups semi-sweet chocolate chips

1cup heavy whipping cream

1TSP each of Cinnamon and Chillipowder

1TSP Orange rind (optional)

1/2TSP salt

For dusting (options, use one or all!)

Cocoa powder

Mixture of 2TBSP cinnamon, 1/2 TSP Chilipowder, and 1TBSP cocoa

Chopped walnuts

In a double boiler, melt chocolate and add in whipping cream slowly until completely dissolved. Add spices (including salt) and mix thoroughly. Chill for 1hr + or until mixture has stiffened and can be rolled into 1inch sized balls (thats not what she said so stop it!). Roll each truffle in powder or topping of choice and refrigerate and eat whenever you want!

Good luck guys! Enjoy your little taste of Ancient Mexico!

Homemade Granola is easier than you might think, and when you make it yourself, you can gaurentee that you will always find the perfect ingredient to throw in! Its a perfect snack to throw in your backpack or even your purse with you while you catch the bus, and its very high in fiber, keeping you *regular* which I know everyone is just soo fond of doing. Take a look, and try it yourself!

Liss’s Homemade Granola

Feel free to add or subtract ingredients from the granola. Add fresh berries, and milk to have a delicious breakfast cereal, or add dried fruits and nuts such as figs, sunflower seeds, dried apricots, or peanuts to make the granolar heartier, like a good trail mix.

3cups Rolled Oats

1cup Shelled, Unsalted Sunflower seeds

1/2cup Raisins

1/2cup Dried Cranberries

1cup Almonds (whole or chopped)

1/2 cup Sesame Seeds

1/2cup Kashi 7Grain Puffed Wheat Cereal mix

1TSP Cinnamon

1TSP Nutmeg

1/2TSP Cloves (if you have them)

1cup Honey

In a large mixing bowl, combine all ingredients and Mix well, so that the honey covers all of the mixture. Crumble onto baking sheet lined with tinfoil or parchment, and Bake on 350 F for 25 minutes or until golden brown. Let cool, and store in airtight jars for ultimate freshness.

Enjoy this health on-the-go snack! Its very simple, and requires very little time to make! Crumble this over ice cream for a snack, eat it with milk as a cereal or toss it in a to-go bag and take it with you!

So why not try it? I cant see why you shouldnt

I guarantee that you will fall in love.

Easy Bake Apples

4 Red Apples

1cup Brown Sugar

1TBSP Cinnamon

1/2cup Walnuts OR

1/2cup Raisins

Cut the top off of the apples, and scoop out the middle seeds leaving a bowl-like shell. Mix together other ingriedients and pack into the middle of the apples. If you run out, just make more of that same recipe. Bake the stuffed apples at 450 degrees F for about a half an hour, or until the apple is soft.

My best friend reminded me how delicious that Apples really can be. Im not partial to them by themselves, but there are so many things that you can do with apples, the possibilities are endless.

Here are two simple and delicious other ways to use apples, before I take off for my lovely Ancient Greek Classics class.

Trail mix Apples: Cut 1 Apple into cubes, and smear with peanut butter. Sprinkle with cinnamon and press trail mix or raisins into the peanut butter.

Easy Apple Pies: Peel and slice 3 Apple, and mix with 1cup Brown sugar and 1TSP cinnamon. Add 1 Shot of rum (if you have it, omit if not). In a small tin pie plate (dollar store), line with pre-made pie crust and add in apple mix. Cover with more crust and bake for 30 min on 450*f.

An Apple a day may keep the doctor away, but when its covered in peanut butter and Brown sugar who can resist!

This coffeecake is an amazing recipe with very little ingriedients. Even as a student, I have at least half of those items here already, so a quick and cheap run to the grocery store is enough to fill your house with the sweet smell of baking!

This recipe is a little bit more, should we say involved. Not hard, but it consist of three different elements. You have the cake part, the pumpkin filling, and the streusel,

Chilled Fruit Smooties

1 package cream cheese, low fat

1cup fat-free sour cream

1bag frozen tropical fruit mix

1TBSP honey

2TSP lemon juice

1/2 cup chopped walnuts

Begin by squishing the defrosted fruit up into smaller pieces, then mix in the rest of the ingredients together until everything is creamy. Spoon into muffin cups, and freeze for 1hour min. When ready to serve, pull out and add a few more spoonfuls of defrosted fruit, and a drizzle of honey.

Try it!

Liss’s Banana bread

1/2cup white sugar

1/2cup brown sugar

2 bananas mushed up

2TBSP butter, melted

1 egg

4TBSP milk

1 1/2 cup flour

1/2 TSP baking soda

1TSP baking powder

1TBSP Cinnamon

1TSP nutmeg

2TBSP vanilla extract

1TBSP Spiced rum

1/4cup walnuts

Mix all ingidients together thoroughly. The batter should be a little bit wet, but enough that it isnt runny. Cook in a loaf pan for 1 hour on 350*F, or until you can stick a knife in and pull it out clean.

My boyfriend likes to toast his banana bread, where as I like mine warmed with butter and honey. Try it your own way, and try substituting walnuts for diced apples, or raisins!
