This recipe is for a dear old friend, who requested a recipe with boneless skinless chicken breasts, rice and veg. Something all students can relate too. However, Ive heard complaints that chicken can be bland. So here is a very fresh tasting chicken that takes about 10 minutes prep time, and a carmelized onion, caper and thyme rice. Easy enough? Thought so

This recipe is for a tender Tomato Basil and Mozzarella stuffed Chicken Breast, and Caramelized onion, caper and thyme rice.

Fresh Stuffed Chicken Breasts with Italian-inspired rice

Chicken:

1 Tomato, sliced

3cloves garlic, chopped

4 Basil Leaves

1 Lemon

Salt, Pepper, Dried Oregano

2 Chicken Breasts

2 small slices of Mozzarella or whatever is in your house

Rice:

1/2 cup Brown or White rice (brown is preferred, hold up to the Onions better)

1.5cups water (to boil rice with)

1lrg sweet onion, chopped small

1small bottle capers, rinsed off to get rid of excess salt.

1TBSP Chopped fresh time, or 1.5TBSP Dried Thyme

1TSP Pepper

1/4 cup white wine

Chicken: In a large bowl, juice the lemon, and add 3/4 of the chopped garlic, salt and pepper, and 4TBSP olive oil. Cut a small slit, enough to fit a slice of tomato, basil and a cheese slice into, and soak in the lemon juice for 15 minutes. Remove from the bowl, and insert a slice of tomato (you may need to cut it in half to make it fit), 2 basil leaves in each, and a slice of cheese. Hold together with a toothpick and bake covered in the oven for about a half an hour, or until the juice from the chicken is clear and not pink.

Rice: In a large separate pan, Begin by adding oil and chopped onions. Cook on Med-High until the onions start to ‘melt’ down. Add 1-2TBSP of white wine, and continue cooking until onions are a light brown colour and smell sweet. Add capers, and thyme + S&P to taste and allow to heat up. Set aside. Cook rice. In the large pan, slowly bring it back up to a medium high heat, add another 3TBSP of oil, and white wine to make a thin sauce, and add in rice. Stir well, and serve chicken on bed of rice.

Thanks for the challenge Mike you may need to play around with cooking time, but this should shake things up a bit!

If your adventurous, try adding Sundried tomatoes or spinach to the rice as well. Just let them wilt in while the rice is cooking with the Capers. Also, if the rice seems too sticky, add a few more TBSP of wine, and a few TBSP of chicken broth.

Hope this helps!

Tonight Im cooking alone, for the first night in a very long time. And I try to be health-conscious when I cook for myself, because I can control every aspect of my meal. Tonight i decided to make Fish. No Frills has single sole fillets for .89 cents this week, so I grabbed a few and played around with it tonight. Check out my results!

If there is one thing that really gives this sole taste, its the spices used on them. unfortunately, a lot of student kitchens do not have spices, which I find very upsetting! With a few good spices, you can eat chicken hundreds of different ways for a very long time! Not just chicken, but pork, beef, ground meats, turkeys etc! I find this upsetting because one trip to the Dollerama, and your set for a while! Now, for this fish tonight, I used one of their grinder-spices. They come in a clear grinder and include spices such as the Cajun BBQ, and what I used today, Garlic Pepper. So go buy spices!!!!!!!

Lemon Garlic Pepper sole

*Total meal cost: 3 dollars

The Side I use for this fish is just a Uncle Bens rice in whatever flavor I feel like that day. I especially like the Tomato Basil, and the Butter Garlic flavor. I also have Wilted Garlic Greens (see recipe) with this as well if Im feeling a little more hungry.

1 Sole fillet

1/4 cup olive oil

1/2 lemon, juice and rind

1TSP butter

2TBSP garlic pepper

1/2TSP (one ‘dash’) Worchistier sauce

2cloves Garlic

1/2TSP hot sauce OR red pepper flakes (optional*)

1TSP pepper

Heat oil in a frying pan, and add chopped garlic, and fish. Add the garlic pepper spice, red pepper flakes OR hot sauce, worchistier and butter. Cook for 3 minutes on each side, or until the fish is almost cooked to your preference, then add lemon rind and juice and pepper. Serve when fish is cooked to your preference

Have a feel-good meal tonight, you’ll be surprised how filling this meal is!

Both my boyfriend and I have two separate recipes that both work out to one delicious one pot wonder. This can be made either as a casserole, or as rice with sauce. Boyfriend makes his sauce on rice, and I learned how to make it in a casserole. Im going to give the sauce recipe because the sauce stays good for days, and tastes just as good as leftovers over fresh rice.

Chicken Broccoli Rice

1can Cream of Broccoli and Cheese soup

1Chicken Breast, cut into thick strips

2 cloves Garlic

1 lrg head Broccoli, cut into spears

1/2 cup Milk

1 cup Havarti Cheese

Salt and Pepper to taste

1/2 cup Water

1/2 cup rice per person

Begin by adding 2TBSP oil to a pot. Heat oil, and cook chicken until juices run clear. add garlic and continue cooking on med. heat. Add 1/4 cup water to the pot and heat until it boils slightly, then add Broccoli spears. Cook for 1 Minute then add Soup, and milk and stir until dissolved completely. Simmer on medium until sauce thickens, then add cheese into sauce. Stir until all the cheese is dissolved in the sauce, and the sauce has reached your desired thickness. Serve over rice.

*For the Cassarole version, add all ingreidients uncooked to a cassarole dish with 2-1 rice ratio, and soup mixed with milk, and cook in oven covered for about 30-45 minutes or until chicken is cooked, and rice is fully cooked.

I adore this recipe. This is comfort food at its finest for me, and its so simple and cheap to make. I KNOW you’ll enjoy this meal.
