Apologies for my absence, dear friends! I have been preoccupied for the past 2 weeks watching the OLYMPICS! Final Total for CANADA was a whopping 14 Gold, Setting a new WINTER OLYMPICS RECORD!! Amazing! So, I have created a recipe in honor of our athletes, based on what they would eat.

Just so we’re all clear on the standings here (G/S/B/total):

1.

5

26

Alright, now that we have that cleared up haha, I wanted to also add an exert from a page I was reading in research of this blog. Its from MSN.ca, and is discussing what was purchased for the Olympians at the very beginning. I thought it was interesting to look at

“So what exactly are the athletes eating out there in Vancouver and Whistler? Just a few examples of whatVANOC has purchased just at the start of the games: 36,540 eggs, 42,440 liters of 2% milk, 28,140 liters of skim milk, 77,800 lbs of bananas, 86,664 Granny Smith Apples, 70,104 Golden Delicious Apples and 11,000 lbs of pasta.” (http://lifestyle.ca.msn.com/health-fitness/diet/ee-article.aspx?cp-documentid=23468426)

Thats a lot of food!

Back to the blog. For Desert: A fast Fruit Parfait, and for Dinner: A firecracker shrimp Pasta

3 Minute Parfait (no.. seriously)

3/4cup vanilla low-fat yogurt

1/4cup blueberries and raspberries (each)

2TBSP honey

3TBSP chopped almonds

You can do this one of two ways: Layer the parfait Yogurt, Berries, Honey,Yogurt, Berries, Honey, Almonds, OR just pile it yogurt, berries, honey almonds. Whatever’s faster for you Its as easy as that.

A Golden Finish: Firecracker Shrimp Pasta

1 OR 1.5 cups peeled/cooked frozen shrimp

1/2 TSP Chili flakes

2 cloves chopped garlic

1cup Snowpeas (in pod, halved)

1/2cup chopped rapini

1/2cup chopped cherry tomatos

100g WHOLE GRAIN Pasta per person (a very healthy choice)

1/4cup oil

Begin by starting boiling water for pasta, and heating pan with oil for the shrimp. Follow pasta package cooking directions, adding 3TBSP salt to the boiling water. Add in the snow peas and rapini to the pasta water 4 minutes before the pasta is finished. In the frying pan (about 5 minutes before the pasta is finished, the same time you add the snow peas and rapini to the pasta) add the garlic, chili pepper flakes, salt, pepper and shrimp to the pan. Cook for about 3 minutes on each side. Drain pasta and veggies, and then toss everything together quickly in the shrimp frying pan. Add more oil to coat the pasta if there isnt enough in the pan already. Season with more salt and pepper if desired.

Enjoy my loves!

I shall return soon!

Happy whatever days this recipe is for! Im secretly supposed to be studying, but you all are more important than politics100 Last night, the boyfriend and I made one of the best throw-together meals We’ve had in a long time. Pan fried steaks with white wine and cherry tomato sauce, and roasted potatoes and green peppers. Sounds hard? Well, lets put it this way. It took about 45 minutes to have dinner on the table with about 10 ingredients and costs under 10 dollars. umm YUM!?

We used pan fry steaks for this recipe, they are inexpensive ( i paid 3.50 for 4 huge steaks), and are the butchers choice of meat. Its very lean, and cook very quickly. Watch for the potatoes, they will take atleast 45 minutes on 400 F

Steaks with White wine and Cherry tomatoes, and Roasted Veg

2lrg Potatos, cut into small-ish chunks ( the smaller they are, the faster they cook. however, don’t make them too tiny. about the size of normal hash browns)

1 green pepper, cut into large chunks

4 cloves garlic, chopped (seperate them into 2-clove piles, one is for the potatoes and one is for the sauce)

3TBSP oregano

1TBSP pepper

1TSP salt

4 Pan fry steaks

1cup white wine

1/2cup cherry tomatoes

In a large bowl, combine 1/2cup olive oil with the chopped peppers, potatoes, oregano, salt, pepper and garlic. Mix well to coat evenly with spices and oil, then spread out evenly on a baking sheet and cook for 45 minutes on 400F or until they are crispy outside, and soft in the middle. Broil for last 15 minutes. In a large pan, fry steaks in a small amount of oil. Remove when cooked through, then de-glaze pan with wine. De glazing is basically getting all the yummy fried brown beef bits off the bottom of the pan to make the sauce delicious! Add the cherry tomatoes, then let simmer until the wine has evaporated by 1/4. Add the steaks back into the pan, and continue simmering until the sauce has reduced by half. Serve the sauce on top of the steaks, and the crispy spiced potatoes on the side.

4 More days till christmas!!!

WHOSE EXCITED?!?!

yum yum, might as well eat well all the way leading up to Christmas too right

Tonight Im cooking alone, for the first night in a very long time. And I try to be health-conscious when I cook for myself, because I can control every aspect of my meal. Tonight i decided to make Fish. No Frills has single sole fillets for .89 cents this week, so I grabbed a few and played around with it tonight. Check out my results!

If there is one thing that really gives this sole taste, its the spices used on them. unfortunately, a lot of student kitchens do not have spices, which I find very upsetting! With a few good spices, you can eat chicken hundreds of different ways for a very long time! Not just chicken, but pork, beef, ground meats, turkeys etc! I find this upsetting because one trip to the Dollerama, and your set for a while! Now, for this fish tonight, I used one of their grinder-spices. They come in a clear grinder and include spices such as the Cajun BBQ, and what I used today, Garlic Pepper. So go buy spices!!!!!!!

Lemon Garlic Pepper sole

*Total meal cost: 3 dollars

The Side I use for this fish is just a Uncle Bens rice in whatever flavor I feel like that day. I especially like the Tomato Basil, and the Butter Garlic flavor. I also have Wilted Garlic Greens (see recipe) with this as well if Im feeling a little more hungry.

1 Sole fillet

1/4 cup olive oil

1/2 lemon, juice and rind

1TSP butter

2TBSP garlic pepper

1/2TSP (one ‘dash’) Worchistier sauce

2cloves Garlic

1/2TSP hot sauce OR red pepper flakes (optional*)

1TSP pepper

Heat oil in a frying pan, and add chopped garlic, and fish. Add the garlic pepper spice, red pepper flakes OR hot sauce, worchistier and butter. Cook for 3 minutes on each side, or until the fish is almost cooked to your preference, then add lemon rind and juice and pepper. Serve when fish is cooked to your preference

Have a feel-good meal tonight, you’ll be surprised how filling this meal is!
