Apologies for my absence, dear friends! I have been preoccupied for the past 2 weeks watching the OLYMPICS! Final Total for CANADA was a whopping 14 Gold, Setting a new WINTER OLYMPICS RECORD!! Amazing! So, I have created a recipe in honor of our athletes, based on what they would eat.

Tonights recipe is what I had for supper, and I looooved it! I hope you will too, its a good alternative supper for a vegetarian, but pork chops can be substituted as well. I definitely recommend the eggplant and giving this a try. A word f warning however, you will have a few dished to deal with so be sure you have a good 2 hours to make this one. Shameful as it is, I have put myself on a strict diet of Veggies and Lean meats for a few weeks, and eating one healthy medium sized meal a day. So far its been working and I’ve been trying out recipes that are as veg-friendly as I could possibly come up with, and This is one of them. Keeping in mind this is a recipe I have created for DIET purposes, this is still a great light lunch soup, or a snack if your craving something warm.
With all the new years resolutions being followed (or not lol) i thought a nice warm and healthy dish would be a good one to come back with. A little something I cooked up for dinner tonight! It was super easy to make and tastes absolutely delicious. The Only downside to this bad boy is that it takes a while for the sweet potato to cook, and needs to simmer for 20 minutes. After that, the rest isabreeze though, and everything is fresh, so its quite nutritious as well!
Tonight Im feeling starved and wanted something satisfying and warm as a bedtime snack. I had a sudden craving for crispy fried zucchini. Feeling hungry tonight too? This takes about 10 minutes to cook. To put that into perspective, my Hot Chocolate wasnt even ready in 10 minutes. Try these out!
